first up, my main guitar, the now discontinued S370. the shop i bought it from three years ago didnt have any other colours. with the scallops, it plays very nicely indeed, and with a tonezone bridge pickup and air norton neck pickup, it can sound very nice too.
detail of the scalloping job.
my korg multi-effects- i use this straight into the mic jack.
and finally, a pick i got at an yngwie concert.

before i scalloped it (that took a while let me assure you ) that guitar had jumbo frets anyway, so i was pretty used to not touching the fretboard, and subsequently having a lighter touch on the strings. i never found transitioning to a scalloped board a problem really, but i did try it first on my old strat copy to get the technique down.
when i finished the ibanez's neck, i worried that i had gone too deep and weakened it, and yes the truss rod needed a little tweak at first, but most of the strength in any neck should come from the truss and maple. so, 6 months on and i havent looked back
it doesnt make it easier to play fast, and you need to practice your accuracy other wise fingers can go between the strings, but it really improves the bending ease, and i never lose the grip on strings any more
